Ingredients
- 2 cans (15 oz each) chickpeas, rinsed and drained
- 1 cup crumbled feta cheese
- 1/2 cup dried cranberries
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 1 teaspoon honey
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- In a large bowl, combine chickpeas, feta cheese, cranberries, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, honey, garlic, salt, and pepper until well blended.
- Pour the vinaigrette over the chickpea mixture and toss gently to coat evenly.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
