Description

A vibrant and protein-packed salad featuring chickpeas, tangy feta, sweet cranberries, and a zesty lemon vinaigrette. Perfect for a light lunch or side dish.


Ingredients

  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Salt and black pepper to taste


Instructions

  1. In a large bowl, combine chickpeas, feta cheese, cranberries, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, garlic, salt, and pepper until well blended.
  3. Pour the vinaigrette over the chickpea mixture and toss gently to coat evenly.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
