Description

A vibrant, protein-packed salad featuring creamy chickpeas, tangy feta, sweet dried cranberries, and a zesty lemon vinaigrette, perfect for a light lunch or side dish.


Ingredients

  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Salt and black pepper to taste


Instructions

  1. In a large bowl, combine chickpeas, feta cheese, dried cranberries, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, minced garlic, salt, and pepper until well blended.
  3. Pour the lemon vinaigrette over the chickpea mixture and toss gently to coat all ingredients evenly.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
