A savory-sweet appetizer featuring crispy roasted sweet potatoes topped with creamy whipped feta and a drizzle of spicy honey.
Ingredients
- 4 medium sweet potatoes, scrubbed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 8 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1/4 cup honey
- 1/2 teaspoon red pepper flakes
- Fresh parsley, chopped for garnish
Instructions
- Preheat oven to 425°F (220°C). Place sweet potatoes on a baking sheet, pierce with a fork, and roast for 30-35 minutes until tender. Let cool slightly.
- In a bowl, combine feta, Greek yogurt, and lemon juice. Whip with a hand mixer or food processor until smooth and creamy. Set aside.
- Flatten each sweet potato gently with a spatula or the bottom of a glass. Drizzle with olive oil, sprinkle with smoked paprika, garlic powder, salt, and pepper. Roast for another 15-20 minutes until crispy.
- In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes until fragrant. Remove from heat.
- Spread whipped feta on a serving platter. Top with crispy sweet potatoes, drizzle with hot honey, and garnish with fresh parsley. Serve warm.
