Description
A savory-sweet appetizer featuring crispy roasted sweet potatoes topped with creamy whipped feta and a drizzle of spicy honey.
Ingredients
- 2 medium sweet potatoes, scrubbed and cut into 1-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 4 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1/2 teaspoon red pepper flakes
- Fresh parsley, chopped for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange on the baking sheet and roast for 20-25 minutes until tender.
- Remove from oven and gently smash each round with a fork or the bottom of a glass. Return to oven for 10-15 minutes until crispy and golden.
- While potatoes roast, blend feta, Greek yogurt, and lemon juice in a food processor until smooth and creamy. Set aside.
- In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes until fragrant. Remove from heat.
- Spread whipped feta on a serving platter, top with crispy sweet potatoes, drizzle with hot honey, and garnish with parsley.
