Description
A fresh and flavorful Mediterranean-inspired flatbread topped with tender Greek-seasoned chicken, creamy tzatziki, and crisp vegetables.
Ingredients
- 2 large flatbreads or naan
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tbsp Greek seasoning blend
- 1 cup plain Greek yogurt
- 1/2 cup grated cucumber, squeezed dry
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 1/2 cup diced cucumber
- 1/2 cup cherry tomatoes, halved
- 1/4 cup thinly sliced red onion
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Place flatbreads on a baking sheet and warm in oven for 5 minutes.
- In a bowl, toss chicken pieces with olive oil, Greek seasoning, salt, and pepper. Cook in a skillet over medium-high heat until browned and cooked through, about 8-10 minutes.
- In another bowl, mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper to make tzatziki sauce.
- Spread tzatziki evenly over warmed flatbreads. Top with cooked chicken, diced cucumber, cherry tomatoes, and red onion slices.
- Return flatbreads to oven for 3-5 minutes to heat through. Slice and serve immediately.
