Description

A fresh and flavorful Mediterranean-inspired flatbread topped with tender Greek-seasoned chicken, creamy tzatziki, and crisp vegetables.


Ingredients

  • 2 large flatbreads or naan
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tbsp Greek seasoning blend
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C). Place flatbreads on a baking sheet and warm in oven for 5 minutes.
  2. In a bowl, toss chicken pieces with olive oil, Greek seasoning, salt, and pepper. Cook in a skillet over medium-high heat until browned and cooked through, about 8-10 minutes.
  3. In another bowl, mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper to make tzatziki sauce.
  4. Spread tzatziki evenly over warmed flatbreads. Top with cooked chicken, diced cucumber, cherry tomatoes, and red onion slices.
  5. Return flatbreads to oven for 3-5 minutes to heat through. Slice and serve immediately.
