Description
Thinly sliced zucchini rolled around a creamy burrata filling, baked until tender, and topped with a sweet and tangy tomato glaze for an elegant vegetarian dish.
Ingredients
- 2 large zucchinis, thinly sliced lengthwise
- 8 oz burrata cheese, drained
- 1/4 cup fresh basil, chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 cup tomato sauce
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
- Grated Parmesan for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Lay zucchini slices on a baking sheet, brush with olive oil, and season with salt and pepper. Bake for 5-7 minutes until pliable.
- In a bowl, mix burrata, basil, and garlic until creamy. Season with salt and pepper.
- Spread a spoonful of burrata mixture onto each zucchini slice and roll up tightly. Place seam-side down in the baking dish.
- In a small saucepan, combine tomato sauce, balsamic vinegar, and honey. Simmer for 5 minutes until slightly thickened.
- Pour tomato glaze over zucchini rolls. Bake for 15-20 minutes until heated through.
- Garnish with grated Parmesan and fresh basil before serving.
