Description

Elegant zucchini rolls filled with creamy burrata cheese and herbs, baked until tender and served with a rich tomato glaze for a light yet indulgent dish.


Ingredients

  • 2 medium zucchinis, sliced lengthwise into thin strips
  • 1 ball burrata cheese (about 8 oz)
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup tomato sauce
  • 1 tsp balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese for topping


Instructions

  1. Preheat oven to 375°F (190°C). Lightly salt zucchini strips and let sit for 10 minutes to release moisture, then pat dry.
  2. In a bowl, mix burrata, basil, garlic, salt, and pepper until creamy. Spread a spoonful onto each zucchini strip and roll up tightly.
  3. Place rolls seam-side down in a baking dish. Drizzle with olive oil and bake for 20-25 minutes until zucchini is tender.
  4. Meanwhile, simmer tomato sauce with balsamic vinegar over low heat for 5-7 minutes until slightly thickened to make the glaze.
  5. Serve zucchini rolls warm, topped with tomato glaze and a sprinkle of Parmesan cheese.
