Description

A hearty, low-carb oven-baked dish featuring tender chicken breasts, fresh spinach, and savory mushrooms in a creamy, cheesy sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown.
  3. Transfer the chicken to a baking dish. In the same skillet, sauté garlic and mushrooms for 3-4 minutes until softened, then add spinach and cook until wilted.
  4. Pour the heavy cream into the skillet, stir to combine, and simmer for 2 minutes. Pour the mixture over the chicken in the baking dish, top with mozzarella cheese.
  5. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
