Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1/2 cup heavy cream
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown.
- Transfer the chicken to a baking dish. In the same skillet, sauté garlic and mushrooms for 3-4 minutes until softened, then add spinach and cook until wilted.
- Pour the heavy cream into the skillet, stir to combine, and simmer for 2 minutes. Pour the mixture over the chicken in the baking dish, top with mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
