Description
A comforting and flavorful pasta dish featuring cheese-filled ravioli tossed with sautéed spinach, mushrooms, and sun-dried tomatoes in a garlic-infused olive oil sauce.
Ingredients
- 1 pound cheese ravioli (fresh or frozen)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 4 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the ravioli according to package directions until al dente. Drain and set aside.
- While the ravioli cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add sliced mushrooms to the skillet and cook for 5-7 minutes until softened and lightly browned. Stir in sun-dried tomatoes and cook for another 2 minutes.
- Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper.
- Add the cooked ravioli to the skillet, gently tossing to combine with the vegetables. Sprinkle with Parmesan cheese and toss again.
- Serve immediately, garnished with fresh basil if desired.
