A rich and savory pasta dish featuring cheese-filled ravioli tossed with sautéed spinach, mushrooms, and sun-dried tomatoes in a creamy garlic sauce.
Ingredients
- 1 package (20 oz) cheese ravioli
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 8 oz cremini mushrooms, sliced
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes (oil-packed), chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
- Bring a large pot of salted water to a boil and cook the ravioli according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and mushrooms, sauté until mushrooms are tender and browned, about 5-7 minutes.
- Stir in spinach and sun-dried tomatoes, cooking until spinach wilts, about 2 minutes.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce thickens slightly.
- Add the cooked ravioli to the skillet, tossing gently to coat in the sauce. Season with salt and pepper.
- Serve immediately, garnished with fresh basil.
