Description

A rich and savory pasta dish featuring cheese-filled ravioli tossed with sautéed spinach, mushrooms, and sun-dried tomatoes in a creamy garlic sauce.


Ingredients

  • 1 package (20 oz) cheese ravioli
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes (oil-packed), chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil for garnish


Instructions

  1. Bring a large pot of salted water to a boil and cook the ravioli according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and mushrooms, sauté until mushrooms are tender and browned, about 5-7 minutes.
  3. Stir in spinach and sun-dried tomatoes, cooking until spinach wilts, about 2 minutes.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce thickens slightly.
  5. Add the cooked ravioli to the skillet, tossing gently to coat in the sauce. Season with salt and pepper.
  6. Serve immediately, garnished with fresh basil.
