Ingredients
- 2 ripe pears, cored and sliced
- 2 tablespoons unsalted butter
- 1 tablespoon brown sugar
- 6 cups mixed salad greens (e.g., arugula, spinach, romaine)
- 1/2 cup crumbled blue cheese
- 1/2 cup walnuts, toasted
- 1/4 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- In a skillet over medium heat, melt butter and brown sugar. Add pear slices and cook for 5-7 minutes until caramelized and tender. Remove from heat and let cool.
- In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, salt, and pepper to make the vinaigrette.
- In a large salad bowl, toss the mixed greens with half of the vinaigrette until evenly coated.
- Arrange the caramelized pears on top of the greens, then sprinkle with blue cheese and toasted walnuts.
- Drizzle the remaining vinaigrette over the salad and serve immediately.
