Description

A fresh and creamy twist on classic Caprese salad, served in avocado halves for a light, elegant appetizer or side dish.


Ingredients

  • 2 ripe avocados, halved and pitted
  • 1 cup fresh mozzarella balls (ciliegine), drained
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • Salt and black pepper to taste


Instructions

  1. Scoop out a small amount of avocado flesh from each half to create a larger cavity, then mash the scooped avocado in a bowl.
  2. In a separate bowl, combine the mozzarella balls, cherry tomatoes, chopped basil, and mashed avocado. Drizzle with olive oil, season with salt and pepper, and gently mix.
  3. Spoon the mixture evenly into the avocado halves, mounding slightly.
  4. Drizzle each stuffed avocado with balsamic glaze just before serving.
  5. Garnish with extra basil leaves if desired and serve immediately.
