Description
A classic and comforting side dish featuring fluffy baked potatoes topped with melted butter and fresh chives.
Ingredients
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup unsalted butter, softened
- 1/4 cup fresh chives, finely chopped
Instructions
- Preheat the oven to 400°F (200°C). Wash and scrub the potatoes thoroughly, then pat them dry.
- Prick each potato several times with a fork. Rub the potatoes with olive oil and sprinkle with salt and pepper.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
- Remove the potatoes from the oven and let them cool slightly. Slice each potato open lengthwise and fluff the insides with a fork.
- Top each potato with a generous dollop of softened butter and sprinkle with fresh chives. Serve immediately.
