Description

A vibrant and nutritious avocado toast topped with creamy feta, sweet cherry tomatoes, tart cranberries, and crunchy walnuts for a satisfying breakfast or snack.


Ingredients

  • 2 ripe avocados
  • 4 slices of whole grain bread
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons dried cranberries
  • 1/4 cup chopped walnuts
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (optional)


Instructions

  1. Toast the bread slices until golden and crisp.
  2. In a bowl, mash the avocados with lemon juice, salt, and pepper until smooth.
  3. Spread the mashed avocado evenly over each toast slice.
  4. Top with cherry tomatoes, crumbled feta, dried cranberries, and chopped walnuts.
  5. Drizzle with olive oil if desired and season with additional black pepper.
  6. Serve immediately.
