Ingredients
- 2 ripe avocados
- 4 slices of whole grain bread
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 2 tablespoons dried cranberries
- 1/4 cup chopped walnuts
- 1 tablespoon lemon juice
- Salt and black pepper to taste
- 1 tablespoon olive oil (optional)
Instructions
- Toast the bread slices until golden and crisp.
- In a bowl, mash the avocados with lemon juice, salt, and pepper until smooth.
- Spread the mashed avocado evenly over each toast slice.
- Top with cherry tomatoes, crumbled feta, dried cranberries, and chopped walnuts.
- Drizzle with olive oil if desired and season with additional black pepper.
