Ingredients

  • 2 ripe avocados, mashed
  • 4 slices of whole-grain bread, toasted
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons dried cranberries
  • 1/4 cup walnuts, roughly chopped
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (optional for drizzling)


Instructions

  1. Toast the whole-grain bread slices until golden and crisp.
  2. In a bowl, mash the avocados with lemon juice, salt, and pepper until smooth.
  3. Spread the mashed avocado evenly over each toast slice.
